0.100 kg | harissa paste |
0.500 kg | couscous, cooked |
0.200 kg | cauliflower, grated |
0.200 kg | zucchini, grated |
0.100 l | apple cider vinegar |
0.100 l | lemon juice |
0.050 l | olive oil |
0.050 l | sesame seed oil, toasted |
0.010 kg | light syrup |
0.003 kg | salt |
1 pc | fresh mint and coriander |
3 pcs | lemon wedges |
Cooking method
- Boil the couscous and let it cool. Sauté the
fava bean mince and season with the harissa
paste, let cool. - Grate the cauliflower and zucchini and
season. - Mix the couscous and seasoned grated
vegetables. Pour the harissa-flavoured fava
bean mince over the couscous. - Garnish with mint and coriander leaves and
lemon wedges.
