Beanit® Fava bean mince harissa couscous

Ingredients
0.700 kg Beanit® Fava bean mince, Unflavoured
0.100 kg harissa paste
0.500 kg couscous, cooked
0.200 kg cauliflower, grated
0.200 kg zucchini, grated
0.100 l apple cider vinegar
0.100 l lemon juice
0.050 l olive oil
0.050 l sesame seed oil, toasted
0.010 kg light syrup
0.003 kg salt
1 pc fresh mint and coriander
3 pcs lemon wedges
Cooking method
  1. Boil the couscous and let it cool. Sauté the
    fava bean mince and season with the harissa
    paste, let cool.
  2. Grate the cauliflower and zucchini and
    season.
  3. Mix the couscous and seasoned grated
    vegetables. Pour the harissa-flavoured fava
    bean mince over the couscous.
  4. Garnish with mint and coriander leaves and
    lemon wedges.
