Beanit® Fava bean mince maki sushi

Ingredients
0.050 kg Beanit® Fava bean mince, Unflavoured 2.5 kg
0.050 kg mayonnaise (vegan)
0.005 kg miso paste
0.200 kg sushi rice, boiled
0.005 l rice vinegar
0.002 kg sugar
0.001 kg salt
0.003 kg cucumber, julienned
0.002 kg roasted onion flakes
Cooking method
  1. Boil the sushi rice, season and let cool.
  2. Process the fava bean mince in a food processor and add the miso paste and mayonnaise. Let it marinate in the fridge.
  3. Prepare the sushi roll, with cucumber and carrot as the filling. Slice the roll into maki slices. Pipe the filling on top.
  4. Garnish with roasted onion.
