- Boil the sushi rice, season and let cool.
- Process the fava bean mince and incorporate the miso paste and mayonnaise. Pour the filling into a piping bag. Let it marinate in the fridge.
- Prepare the nigiri sushi. Pipe the filling on top.
- Garnish with sesame seeds and chives.
