- Boil the sushi rice, season and let cool.
- Process the fava bean mince in a food processor and add the miso paste and mayonnaise. Let it marinate in the fridge.
- Prepare a sushi roll filled with cucumber and carrot.
- Top the roll with avocado slices and pipe some fava bean mince-miso mayonnaise onto it. Finally garnish with chives and sesame seeds.
