Inside the Nordic oats

Oats are a cereal plant with a loose, branched cluster of florets. When ready to be harvested, oats turn into beautiful golden yellow color. Usually, oats are cultivated in a cooler climate – for example in Finland, Northern Europe. Oats are one of the healthiest grains on earth. After oat groats are dehulled, they have three parts in the edible grain:

The Bran  

The outer layer is called the bran which protects the seed and is rich in both soluble and insoluble fibre. The bran contains vitamins, minerals and is rich in good quality plant protein. Phytochemical, such as avenanthramides and flavonoids, are concentrated in outer bran layers. Researchers are interested in these substances as they have been shown to have a variety of health effects in studies. 

The endosperm 

The middle layer of the oat is called the endosperm. It provides energy for the seed and contains lots of protein and carbohydrates. This part contains beta-glucan, an extremely healthy fibre, which we will return to shortly. 

The Germ 

The core is called the germ which nourishes the seed and contains antioxidants, vitamins, and healthy fat.

Oats contain more soluble fibre than any other grain. They have a special soluble fibre component, beta-glucan. Beta-glucan helps to lower cholesterol.
