0.05 kg Beanit® Fava bean mince
0.05 kg mayonnaise (vegan)
0.002 kg wasabi, paste
0.2 kg sushi rice, boiled
0.005 kg rice vinegar
0.002 kg sugar
0.001 kg salt
0.001 kg sesame seeds
0.001 kg chives, chopped
  1. Boil the sushi rice, season and let cool.
  2. Process the fava bean mince and incorporate the miso paste and mayonnaise. Pour the filling into a piping bag. Let it marinate in the fridge.
  3. Prepare the nigiri sushi. Pipe the filling on top.
  4. Garnish with sesame seeds and chives.
